A 50g pouch of On Angels Wings, a pu erh red tea blend with mate, calendula, mallow and a scattering of freeze-dried strawberry, raspberry and blueberry. The cup is dark and earthy, with a berry sweetness floating over the top.
Pu erh is the aged tea of Yunnan Province in south west China, where the moist, mild and mountainous climate suits tea growing. It is full-bodied and dark, and its earthy flavour grows stronger, thicker and sweeter the longer you brew it. Here it is lifted by fruit and petals, which makes a gift for anyone who loves a rich, comforting cup.
Use 2 to 3 grams of leaf for every 200ml of water. Heat the water to between 90 and 95 degrees and let it stand for 4 to 5 minutes, or a little longer if you like a stronger, sweeter cup. It is lovely on a grey afternoon.
